Due to the fermenter’s self-priming turbine the oxygen needed for submersed fermentation is introduced into the tank in the form of fine air bubbles. This optimises the supply of oxygen to the vinegar bacteria, ensuring very high yields and low energy use. The Alcoline© inline alcohol measurement system controls the automated process directly. Feedstock versatilityVogelbusch vinegar plants are highly flexible in terms of both raw materials and specifications. Capacity starts at 4,000 litres per day. Vinegar is manufactured from fruit wine (grape, apple, etc.) or pure alcohol. It is an important acidifier and preservative, used by the food processing industry and by households for salads, vegetables and sauces.
